Help me choose an EDC laptop

Since I am on semi-hibernation, I find myself working on all kinds of weird projects. Today I worked on a completely ridiculous project to save a site that has been archived on the Wayback Machine and then put that site into my self-hosted Kiwix instance.

Adding a local network to my portable homelab/desktop
A key component for this portable homelab/desktop is to be able to run a LAN so I can serve files between multiple devices and use as a hub at an event, hotel, AirBnB, etc. This is a key feature to a portable homelab. I need to be able to deploy the various "lab" aspects of this build.
